This granola is so tasty, crunchy, spicy and nutty - I love it with ice cold almond milk but you can sprinkle it on your porridge or even have a handful as a high energy pre-workout snack. Would love to know if you make it. Enjoy!
Nuts, seeds, dried fruit etc of your choice (I used almonds, raisins and roasted hazelnuts)
Melt 1/3 cup coconut oil with 3 x tbsps honey and combine with 2 x cups of Oats in a bowl.
Add a pinch of salt, .5 tsp cinnamon, .25 tsp ginger, and a good scraping of fresh nutmeg.
Stir and spread evenly onto 2 x lined baking trays. Bake at 200c for 10-15 minutes, until golden brown.
Remove from oven and cool totally.
Combine a 1/4 cup of all your extras - you can blitz the nuts quickly if you prefer less chunks but I like a chunky granola.
Mix everything together and store in an airtight container.
